Cinnamon Porridge (makes 2)

Ingredients:

1 cup porridge oats

1 cup milk of your choice

3/4 cup water

1 tsp cinnamon

date syrup

almond butter

seed mix*

In a small saucepan, add oats, milk, water + cinnamon and heat on medium until it reaches a thick consistency. Stir throughout, especially towards the end, so it doesn’t stick. Transfer to a bowl, add a spoon of almond butter, drizzle of date syrup and some toasted seeds.

Toppings!

My go to toppings are the above, but you can be as playful as you like. Add easy fruits such as berries, sliced banana or tropical fruits. In the Winter I make stewed fruit. My go to seeds mix, is flaked almonds, pumpkin, sesame, flax and sunflower seeds.

*How to make a seed mix

Add a table spoon of each seed to a dry frying pan and heat gently whilst moving constantly until the seeds start to pop and brown. Once toasted, make sure to transfer them from the pan to a bowl immediately so they don’t burn.
